Salmon with Indian Spices

This salmon was really, really, good: the 'crust' that formed on top was delicate, and the spicy topping made a nice balance with the rest of the salmon. I totally suggest trying this!






Ingredients:
1 salmon fillet
1/8 cup low-fat plain yogurt
1/4 teaspoon ground ginger
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper

you'll also need:
baking sheet lined with foil and fitted with wire rack (or a broiler pan)
spatula
cooking spray
small bowl

1. in a small bowl, combine the yogurt and all the spices. Stir until well mixed.
2. preheat the broiler. Spray the wire rack with cooking spray and lay the salmon fillet on it.

3. spoon the yogurt mixture on top of the spoon and spread it on evenly. Discard any leftovers.
4. broil the salmon on the center rack for 12 to 14 minutes, or until it's just opaque. When it's done, use the spatula to serve the fish on a plate, and eat immediately.


I got this recipe from the show Everyday Food, and adapted it just to make it a single-portion meal.
