Spicy Stir-Fry With Rice, Vegetables, and Leftover Pork

This stir-fry was simple but had a real kick to it. I love making things like this because it uses up a bunch of leftovers that might otherwise wilt and become inedible. This carries well, so don't be afraid to make it for a lunch you have to take with you.

Baked Cheesy Pasta With Vegetables

This pasta dish was so good! It was delicious and simple, and filling without making me feel stuffed. It's nice to have your whole meal in one dish. Plus, I really appreciated the cheese. This recipe makes 2 servings, so I'll be having leftovers.

Broccoli and Three-Cheese Mini Frittatas

These mini-frittatas are amazing! I found the recipe on the blog Kalyn's Kitchen. The only thing I did really differently was that I don't have giant 1-cup muffin tins, so I used custard bowls instead. Anything that holds 1 cup and is both microwave and oven-safe will work. But subtract about 5 minutes from the cooking time if you're using glass!

Pasta with Savory Broccoli Sauce

I have to admit, I was a bit worried when I decided to make this because it has anchovy in it, which I hate. But really, it was quite all right. The sauce was lightly salty, and the bits of crushed red pepper made an interesting variation. It wasn't fantastic, though. And if I did make this again, I'd be sure to serve it with a slotted spoon so the extra liquid gets left behind: pasta swimming in its own sauce is not nearly as fun as it sounds.
