Spaghetti and Meatball Soup

This soup was easy and comforting, and the best part is you can make it out of the fixings of spaghetti and meatballs once you've gotten sick of them and somehow end up with something new and different. This recipe makes 1 giant bowl of soup or 2 smaller ones. I ate 2 smaller ones, in quick succession.

French Onion Soup

Growing up, I really didn't like onion soup. But given my recent attitude of branching out into new culinary territory, I decided to try making it. After all, it's healthy (onions are a vegetable) and inexpensive, which are both important to me, given the fact that I have no income and am trying to break my candy addiction (again).

Anyway, I actually liked this soup! This recipe makes 4 1-cup-ish servings, and reheats well. On the down side, it may make you cry. A lot.

Spicy Tomato Soup with Sausage and Beans

This soup was really easy to make and really good, not to mention spicy. It'll make you breathe right, that's for sure! The sausage had a nice smoky flavor, and the soup was filling without being too heavy. This recipe makes two generous servings.

Roasted Butternut Squash Soup

I'm not going to lie to you, this soup took a lot longer to make than I had anticipated. If you're looking for a quick meal, buy a similar soup in a box. However, if you don't mind putting in the time, this soup is great! Simple and subtle, it warms you up and fills you with comfort. It's also yummy! It makes a few servings, so either invite people over to share it with you or keep it for several meals.

Garlic-Ginger Chicken Broth

Have you ever wanted to 'dress up' canned or boxed chicken broth into something that doesn't taste so, well, pre-fabricated? No? Well you should! This trick I found gives the broth a lovely depth and makes the kitchen smell great! It would make a great start to Alphabet soup!

Creamy Tomato Soup

I have to admit, I was pretty disappointed with this soup. I found it, well, bland. Too bland. Bland is not really my favorite flavor when it comes to soups. Anyway, this was probably due to the fact that I couldn't find all the ingredients necessary for this soup, and maybe a bit due to the fact I substituted skim milk for half-and-half. Anyway, the recipe I'm listing is the one from the book after I mutilated it into blandness. This soup is for two servings.

Gingery Carrot and Celery Soup

This soup is hearty without being too much, if that makes any sense. The ginger is definitely evident on the tongue, especially after you've eaten the soup, but still subtle. The flavor is mild yet still carroty without being overwhelming. It's satisfying but not heavy. All in all, a simple soup lacking in complexity, which I think is a good thing. This recipe makes 2 servings, so be prepared for leftovers if you're making it for yourself. You'll feel wholesome while eating it.
