Garlic-Ginger Chicken Broth

Have you ever wanted to 'dress up' canned or boxed chicken broth into something that doesn't taste so, well, pre-fabricated? No? Well you should! This trick I found gives the broth a lovely depth and makes the kitchen smell great! It would make a great start to Alphabet soup!

Ingredients:
2 crushed garlic cloves
2 slices of ginger root
2 cups low-sodium chicken broth
1 cup water

you'll also need:
a pot
a metal fine-mesh strainer

1. put all the ingredients in a pot.
2. bring just to a boil, then reduce the heat (to around medium-low) and let simmer for 30 minutes to an hour. I left it for closer to an hour.
3. strain and enjoy! Or use it as a base for a simple soup like chicken noodle.

I got this idea from Serves One. Best investment in a cookbook ever.
