Spice-Rubbed Turkey Breast with Brown-Butter and Rosemary Carrots

This turkey was brilliantly colored and mildly flavored, and the carrots were simple but delicious. The turkey recipe makes four servings, and the carrots serve two. Leftovers ahoy!

Summertime Turkey Burgers

Even though the weather has cooled down considerably (read: it's too bloody cold for this time of year), I still can't bring myself to give up the fresh flavors of summer. This burger is bright tasting and quite yummy. I think, though, that next time I will use just a bit less soy sauce: sometimes it's a bit overwhelming. Maybe I'll add some pepper. This recipe makes 3 burgers, one to cook right away and two to freeze for another day.

Turkey Cutlets with Mushrooms and Gravy

Initially I had planned to make a nice gravy out out chicken broth and flour, but then it turned out that the broth smelled a little suspicious. Anyway, this is what I did after finding a dusty package of gravy mix instead. I never thought of using a brown sauce on poultry, but beggars can't be choosers, right?

Spicy Marinated Turkey Cutlets

This is a really, really quick meal to prepare because cutlets are thin and cook very fast, and you can marinate it ahead of time while you do other things (like living your life and whatnot). The turkey is delicious while still tasting like turkey; it's got both zip and zest, refreshing at the same time as spicy. This meal was a real winner. Not to mention fast and easy. It's a keeper!
