Spicy Tomato Soup with Sausage and Beans

This soup was really easy to make and really good, not to mention spicy. It'll make you breathe right, that's for sure! The sausage had a nice smoky flavor, and the soup was filling without being too heavy. This recipe makes two generous servings.





Ingredients:
1 can Aylmer Accents diced tomatoes with red pepper
1 cup chicken stock
1 cup beans (I used Pinto)
1 pork sausage (I used bacon and cheddar pork sausage)

you'll also need:
small non-stick frying pan
medium pot with lid
two heat-proof stirring spoons
plate lined with paper towels


1. combine the tomatoes (with their juices) and the chicken stock in the pot over medium-low heat. Once it has heated up slightly, stir in the beans and increase the heat to medium.
2. meanwhile, remove the soft outer casing from the sausage and break it up. Cook it over medium heat in the frying pan, stirring occasionally, until it is browned on all sides and cooked through. Remove it from the pan and drain it on paper towels.

3. increase the heat on the soup to high and bring it just to a boil. Stir in the sausage, reduce the heat and cover.
4. let the soup simmer covered for 30 minutes, then turn off the heat and stir a final time. Serve the soup into two equal portions and enjoy your warm meal!
