Flat Frittata With St. Albray Cheese and Cherry Tomatoes

This frittata is a little different from the ones I usually make: it's got the cheese inside instead of melted on top. It turned out pretty awesome, with the cherry tomatoes and the cheese forming nice little pockets of flavor. I recommend trying this -- a great, relatively quick meal for one!

Broccoli and Three-Cheese Mini Frittatas

These mini-frittatas are amazing! I found the recipe on the blog Kalyn's Kitchen. The only thing I did really differently was that I don't have giant 1-cup muffin tins, so I used custard bowls instead. Anything that holds 1 cup and is both microwave and oven-safe will work. But subtract about 5 minutes from the cooking time if you're using glass!

Cheese and Mushroom Flat Frittata

Now everyone knows that traditionally frittatas are puffy and thick and served in wedges. But what if you're eating alone? What if you just want a nice egg dish with an amazing cheesy crust on top? Well, the answer is the flat frittata. You serve it all to one person and, while it may not 'technically' be a frittata, who's going to quibble about something so yummy?
