I got the idea to bake eggs this way from the many posts about it that I've read on the blog For The Love Of Cooking, which by the way is an amazing work of art that you should definitely check out. I decided to make these specifically because I had some leftover fire-roasted diced tomatoes from the mini casseroles I made. Unfortunately I didn't quite remember the directions I'd read on how to bake eggs, so this was my attempt. It turned out pretty well, but next time I think I'll cook it 5 minutes less. I'll also drain the tomatoes.

Tangy Scrambled Eggs With Salami and Cheese
What do you do when you have a bunch of leftovers too small to do much with? Make eggs, of course! These scrambled eggs were easy and satisfying, and made me feel virtuous for using up food that might otherwise be forgotten and sad.

Flat Frittata With St. Albray Cheese and Cherry Tomatoes
This frittata is a little different from the ones I usually make: it's got the cheese inside instead of melted on top. It turned out pretty awesome, with the cherry tomatoes and the cheese forming nice little pockets of flavor. I recommend trying this -- a great, relatively quick meal for one!

Broccoli and Three-Cheese Mini Frittatas
These mini-frittatas are amazing! I found the recipe on the blog Kalyn's Kitchen. The only thing I did really differently was that I don't have giant 1-cup muffin tins, so I used custard bowls instead. Anything that holds 1 cup and is both microwave and oven-safe will work. But subtract about 5 minutes from the cooking time if you're using glass!

Cheese and Mushroom Flat Frittata
Now everyone knows that traditionally frittatas are puffy and thick and served in wedges. But what if you're eating alone? What if you just want a nice egg dish with an amazing cheesy crust on top? Well, the answer is the flat frittata. You serve it all to one person and, while it may not 'technically' be a frittata, who's going to quibble about something so yummy?

Cheesecake Omelette
This omelet makes a nice, sweet breakfast! I had it for my birthday, but I've never personally made it before. Probably because my omelet-making technique is like the kiss of death to eggs everywhere. But I didn't end up tearing this one, so there! Take that, omelet-karma! I decided to call it a cheesecake omelet because of its ingredients. Plus, it just makes it sound decadent, don't you think?
