Spaghetti and Meatballs

On top of spaghetti all covered with cheese, I lost my poor meatball when somebody sneezed....*cue brokenhearted tears*. It was so sad!! Waaa!!!!  Okay, so technically that never happened. But the meatballs were just SO GOOD that it would have been a real tragedy. This would make a great weeknight dinner because it's easy to put together and doesn't take much time at all. This recipe serves one.



Ingredients:
4 basic three-meat freezer meatballs, defrosted in the fridge
60g whole wheat spaghettini

you'll also need:
small non-stick frying pan
small pot with lid
pot large enough to cook spaghetti
two spoons
pasta strainer
cooking spray

1. spray the pan with cooking spray and heat it over medium heat. Brown the meat balls, turning them over gently with the spoons, until they're browned on all sides.
2. meanwhile, heat the tomato sauce in the small pot until it's bubbling. Place the browned meatballs into the sauce. Cover the pot, and reduce the heat to a good simmer. Cook the sauce and meatballs for 20 minutes.


3. meanwhile, fill the pasta-cooking pot with salted water. Bring the water to a boil, timing it so you have about 7 minutes left to cook the meatballs (or a bit less).
4. once the water boils, add the pasta and cook it for 7 to 8 minutes. When done, drain the pasta and place it in a pasta dish of bowl. Let the sauce and meatballs stop simmering, then top the pasta with it. Enjoy!
