Last week, I made my first attempt EVER at making fudge! Exciting, right? Since I've never made candy before in my life I decided to buy a candy thermometer, since there is no way I'd be able to tell when the mixture reaches the soft-ball stage. Anyway, why drop candy into a pot of water to figure out if it's done when you can just use a thermometer? Mine came with a handy clip that let me abandon it in the pot, which was helpful.

BLT Tortilla Panini
This sandwich is a little messy to eat, especially as you get further along in it, but it is so worth it! The crust comes out delicate and crisp and holds its shape well. All in all, it's a delicious addition to anyone's arsenal of tomato sandwiches!

Butter Pecan Tarts
These butter pecan tarts are the most amazing, delicious, and easy thing to make. They come out looking like something you'd stuff into your mouth right away if you didn't care about burning yourself. They also make your kitchen smell great! Since you'll be making a lot of them, I suggest having a dinner party lined up, or just some people who you can foist your tarts off on.
