Refried Beans With Rice And Cheese

This may look like unappetizing mush, but in reality it's pretty tasty! While it's not traditional to add rice to refried beans, I had some leftover and wanted to use it up.






Ingredients:
1/2 cup beans (I used pinto)
1/3 cup cooked brown basmati rice
1/2 cup grated cheddar cheese
1-2 tablespoons chopped onion
1 diced clove of garlic
salt to taste
enough butter that it coats the bottom of the pan when melted
water

you'll also need:
small non-stick frying pan
heatproof spoon
fork

1. melt the butter in the frying pan, then cook the onion and garlic over medium heat until the onion starts to soften and the garlic starts to brown.
2. add the beans to the pan and let them heat up a bit, stirring frequently. Mash the beans with the back of a fork, adding water gradually as needed so they don't dry out, until they resemble a rough paste.


3. stir the paste around a bit until it's heated through, then stir in the rice, distributing it evenly. Sprinkle generously with salt, then stir in the grated cheese.
4. let the bean mixture cook until the cheese melts, then serve and eat immediately. Mmmmm: cheese!
